Eating more plant-based meals is a healthy way to do your part to draw down your personal carbon footprint. Try a MEATLESS MONDAY for your health and the health of the planet! Here is the entree selection from the kitchen of Mary Beth Downing.
SWEET POTATO/BLACK BEAN TACOS
Sweet potato (peeled and cubed about 1.5 #; I use three small or two large)
garlic (2 cloves chopped/mashed)
1 large red onion diced
1 can black beans (rinsed and drained)
olive oil
1 Tb paprika
1 tsp cumin
1 pinch cayenne
1 tsp turmeric if you want to add this healthy spice.
lime juice
(also need tortillas, plain yogurt, salsa, tomato slices, avocados, etc.)
Sauté onions and garlic in oil for three minutes. Add sweet potatoes, salt, spices, and 2 Tb of water into the pan, cover and lower heat, and simmer for 5-8 minutes until the potatoes are soft. (Recipe calls for 2 Tb of water but I add more than that, maybe 1/4 cup). When potatoes are soft, add the beans and heat through. Add lime juice for flavor and then serve on tacos with the garnishes.
